It is that little soft, moist and perfect piece of heaven to feed your sweet tooth! Cupcakes are a must at every party because everyone loves it, yup! Including my husband.
They add life to the table, the perfect way to end a meal, or if you’re like me before the meal. Shhhhh, don’t tell.
Have you heard how cupcakes got started? Cupcakes were invented by Amelia Simmons. She first called these little yummy desserts “cake in the mug” because of its size. Amelia wanted to bake light cakes in small cups. This became something found worldwide, In every household, party, get together you’ll find cupcakes!!!
But cupcakes aren’t just for kids, right? It’s for everyone including the young at hearts. Wanting something new on the menu for your birthday? Why not try a little booze? And make these Boozy Margarita Cupcakes. Yup! Margarita infused in it! Sounds delicious right?
This recipe is intended to put a little twist on the normal cupcake flavors or for the adults who want to have something different or for parties.
Boozy Margarita Cupcakes
These Margarita Cupcakes are so much fun! They can be switched up with your favorite alcohol flavor. Instead of the tequila and lime, you can use chocolate and Kahlua, rum and coconut for a Pina Colada version. The options are endless. But if you’re like me, you’ll want to stick with the margarita flavor.
I love making them when I go to parties with friends or tailgating. If we’ll be having the kiddos around I’ll make yummy treats for them too like one of these Reese’s Recipes.
INGREDIENTS
FOR THE CUPCAKES
3 cups all-purpose flour
3 teaspoons baking powder
¼ teaspoon salt
1 cup unsalted butter, at room temperature
2 cups granulated sugar
4 eggs
2 limes; zested and juiced
4 tablespoons tequila
1 cup buttermilk
FOR THE FROSTING
2 cups unsalted butter, at room temperature
4 3/4 cups powdered sugar
2 tablespoon lime juice
3 tablespoons tequila
1 tablespoon lime zest
2 limes; sliced
DIRECTIONS
For Cupcakes
Preheat the oven to 325 degrees F. Line a standard muffin tin with paper liners; set aside.
Add butter and sugar to stand mixer outfitted with the paddle attachment. Beat for 2 minutes until fluffy medium speed. Add in one egg at a time until mixed. Add in tequila and lime juice and zest. This may look like curdled milk it’s fine just keep working.
In a separate bowl, add flour, baking powder, and salt. Mix to airate. Slowly one cup at a time add to the stand mixer wet mixture. Add a little buttermilk in between each cup of the flour mixture.
Using a cupcake scoop or ice cream scoop, spoon in the batter into each cupcake liner filling half way. Bake for 25 minutes or until a toothpick comes out clean. These will be bright white cupcakes.
Remove from oven and let cool for an hour or so before icing.
For Frosting
Place room temperature butter into the stand mixer fitted with the paddle attachment. Add a cup at a time of powdered sugar mixing on low speed until all sugar is added. Turn the mixer up to medium speed and add in tequila, lime juice, and lime zest. Mix well until the frosting is stiff. If the frosting is not stiff add more powdered sugar.
Fill a piping bag with star tip attachment and piping frosting onto cupcakes. Place a slice of lime on each.
These cupcakes are best when the lime is sucked first then bite into the cupcake for full margarita flavor effect. Depending on your lime preference you can just use the lime for decoration. Either way, these alcohol-infused cupcakes will be a great addition to any occasion.
Not only are these cupcakes an interesting twist they are also lights and moist.
If you want to make these non Boozy Margarita Cupcakes so they are kid-friendly you can swap out the tequila in both the cupcake and frosting ingredients. You’ll want to use equal parts of lime juice and water in place of the tequila amounts. They’ll become Lime Cupcakes that are just as good as the boozy ones!!!
