We just made it through Halloween and Thanksgiving. Christmas is right around the corner and then we have New Years celebrations. Let’s be honest, I bet eating healthy hasn’t been very easy or maybe it isn’t even a priority for you this year. Whichever it might be. I have a healthier option for the holidays or busy weeknights. This Chicken Alfredo with Spaghetti Squash is a great healthy alternative and will also be a hit with the kids.
Even if healthy options haven’t been your priority this holiday season, health is always a great resolution for the new year. Mark this recipe as your go-to when you need a quick and easy healthy meal for your lunch or a busy weeknight.
Here is a quick way to cook spaghetti squash in the microwave when you are really pressed for time.

Chicken Alfredo with Spaghetti Squash
I am always trying to find ways to be healthy, but my quest is to also find healthier options that pack a lot of flavors. Just because you are sacrificing the calories doesn’t mean you should sacrifice the flavors. For busy moms, it is always important to find options that are good for your family, taste good enough to keep the kids intrigued, and are easy for the busy weeknights that tend to come with the mom gig.

Ingredients
- 2 chicken breasts, cubed
- 2 jars alfredo sauce, store-bought
- 1 spaghetti squash, cooked and insides reserved (shell cleaned)
- 1/2 onion
- 1 tsp garlic
- 1/2 tsp thyme
- As desired salt and pepper
- 2 cups shredded Mozzarella

Instructions:
- In a bowl, add chicken, onion, garlic, salt and pepper, and thyme. Mix well.
- In a frying pan, add the oil, and then the contents of the bowl. Fry until chicken is cooked through and onions are soft.
- Add the alfredo sauce. Let it come to a boil, then turn down the heat to simmer.
- Add the spaghetti squash and mix together well.
- Preheat the oven to 350
- Place the squash shells on parchment-lined baking sheets. Then, take the contents of the frypan, and divide it evenly between the squash shells.
- Top the shells with one cup of mozzarella each.
- Sprinkle with extra thyme.
- Bake for approximately 25 minutes or until the top is golden.
- Remove from the oven and let them cool slightly as they will be very hot!
- Spoon out of the shell onto plates. Enjoy!
