Our family LOVES pizza and sometimes, we want to eat something other than the classic red/tomato sauce. Hence, this recipe. If you like pizza or Alfredo or BOTH, you must try this Easy Chicken Alfredo Pizza! A bite of this thin, crispy pizza will give you a mouthful of creamy Alfredo, big chunks of chicken, and chewy Mozzarella with garlicky greens. Truly a creamy, dreamy Heaven in your mouth.
Easy Chicken Alfredo Pizza
If you need something simple to make for dinner, this is the perfect recipe for you. This pizza is also perfect when you have a little leftover chicken in your refrigerator. In this recipe, I used Naan as a substitute for pizza dough. I love using Naan because I like it’s texture and thickness, especially when used as a pizza crust. You can always opt to use store-bought pizza crust if you can’t find Naan at your local supermarket.
Ingredients
- 4 Naan loaves
- ½ pound of boneless chicken tenderloins or breast
- ¼ teaspoon of salt
- ¼ teaspoon of black ground pepper
- ½ teaspoon of garlic powder
- ½ teaspoon of dried basil leaves
- ½ cup of alfredo sauce (2 tablespoons per flatbread)
- 1 ½ cups of spinach, roughly chopped
- 1/3 cup of artichokes, drained and chopped
- ½ cup of shredded mozzarella cheese
- Garnish with dried oregano (if desired)
Directions
- Preheat oven to 375 degrees Fahrenheit.
- In a bowl, season chicken with salt, black pepper, garlic powder, and dried basil leaves.
- Cook chicken in a pan over medium-high heat about 6-8 minutes per side, until cooked thoroughly.
- Shred chicken or cut into 1-inch chunks. Set aside.
- To assemble pizzas, on each Naan loaf add 2 tablespoons of alfredo sauce and spread it around.
- In this order, layer each Naan loaf equally with spinach, artichokes, and mozzarella cheese. If desired, add a pinch of oregano on top of the pizza before putting into the oven.
- Cook on the middle rack for 6-8 minutes or until the cheese is melted.
- Cut pizza into slices and serve.
Another advantage of using Naan is that it cooks much faster than your regular pizza crust. Longer baking time has a tendency of drying out the chicken so, if you are using a regular pizza crust, make sure to take the cook of the chicken into consideration. Also, do not add too much sauce as it makes the pizza soft and goopy.
