Sweet potatoes always make me think of my family, gathered together in the kitchen, preparing a beautiful meal for friends and family to eat on Thanksgiving Day. Thanksgiving has come and gone. However, that doesn’t mean you can’t enjoy a big helping of this Easy Sweet Potato Casserole.
We still have Christmas that is just around the corner. Seriously, don’t blink! You will miss it! Christmas is a perfect time to whip up another yummy casserole. If you are like me, I enjoy a sweet potato casserole all year long. This easy sweet potato casserole is quick and delicious.

Easy Sweet Potato Casserole
Not only is this recipe budget-friendly you also can’t beat the smells that will be escaping your kitchen. The smells of cinnamon and brown sugar will fill the air and bring everyone running to the table with anticipation. Mom tip, don’t tell your kids about the sweet potatoes being vegetables! Let them be distracted by the smells of sugary goodness!

Ingredients:
- 3 cups sweet potato, cooked, mashed
- 1/3 cup sugar
- 1/2 cup butter (room temp.)
- 2 eggs, beaten
- 1/3 cup heavy whipping cream

Ingredients Topping:
- 1/3 cup butter, melted
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
- 1/2 tsp cinnamon

Instructions:
- Preheat oven to 350 degrees
- Combine first 5 ingredients together
- Transfer to a greased 9 x 13 pan
- In a separate bowl, combine the topping ingredients. Mix until the mixture looks crumbly. Break any large pieces.
- Sprinkle the topping on top of the potatoes
- Bake for 30 minutes or until nicely browned.
