As the name implies, this salad recipe is made out of rice. It is so simple yet the taste is so great! Ideal for busy or big households like mine, this tuna rice salad makes a healthy, delicious, and filling recipe for any meal.
You can keep leftovers in the fridge (up to three days) and serve them as a healthy lunch the next day. It also makes a great party dish. Plus, it’s a kid-friendly recipe. Even those who don’t like regular tuna salad love this one. Definitely a must-try!
Let’s Make this Easy Tuna Rice Salad
Who doesn’t like healthy, delicious, quick and easy meals?! No one loves them more than us, parents, who prepare them! Have a healthy meal ready in just 5 minutes with this tuna salad recipe.
Another thing that I love about this is its adaptability. I’ve read other mommas use olives, green peas, spinach, avocados, etc. This is also good for other canned fish like sardines or salmon. Or even shredded rotisserie chicken would be super yummy. Really, just use whatever you have in your fridge/pantry.
Ingredients
- 2 C. cooked long grain white rice
- ½ C. shredded carrot
- ½ C. chopped celery
- ½ C. chopped red onion
- 1 can white albacore tuna in water, drained
- ½ C. mayonnaise
- 1 tsp spicy brown mustard
- ½ tsp salt
- 1 tsp pepper
- ½ tsp garlic powder
TIP: If you have dietary restrictions, substitute brown rice for white rice and use low sodium tuna. For younger kiddos you may want to omit the spicy mustard or before adding the mustard set some aside for your little ones.
Directions
- Cook rice according to directions to make 2 cups of cooked rice.
- Add all ingredients into a large bowl and mix.
- If you like more chunky tuna, mix all other ingredients first, then add tuna at the end and gently fold.
- Serve warm or refrigerate and serve cold. Delicious both ways!
Our family eats a lot of rice, it’s a cultural thing for us. With our large family and because we have rice with a lot of meals we use our rice cooker. It’s simple to use, quick, and less mess.
This tuna rice salad is filling on its own but if want a more substantial meal, serve with a simple pan-fried chicken or even just some crusty bread.
