Ingredients
- 2 cup of cooked pasta of your choice
- 1 cup baby spinach washed and dried
- several Kalamata olives, chopped
- 2/3 cup of cucumber, chopped
- 1/2 Cup of cherry tomatoes, halved
- 2 tsp of dried oregano
- 2 tsp of lemon juice
- 2 tsp of red wine vinegar
- 4 tbsp. of olive oil
- 1/2 red onion, sliced
- 2 fat clove of garlic, minced
- Crumbled feta cheese to taste
Directions
- In a jar, whisk together olive oil, lemon juice, vinegar, garlic, and oregano and keep aside. This salad dressing shaker is one of my favorites.
- Next, in a bowl, toss together the rest of the ingredients, drizzle the vinaigrette and enjoy!
