These eggs are so simple, yet so brilliant. To be honest, I was a little skeptical at first. I mean, I love eggs and I love avocados but, I haven’t tried them combined together in one dish.

Guacamole Deviled Eggs

I love finding new ways to make some of our favorite dishes even healthier. Using avocados provides the creaminess we love with mayonnaise but using a super healthy fat. I try to add avocados to a lot of my dishes. Not only is it good for us, but it’s also filling and so satisfying.
Ingredients
- 1 avocado; about 1 1/3 cups
- 7 hard-boiled eggs
- 1/4 cup diced onion; diced small
- 6 cherry tomatoes; diced small
- 1 teaspoon lime juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons cumin
- 2 teaspoons paprika
Directions
- Cut hard boiled eggs in half and remove yolks to a small bowl. Place white onto a tray or large plate.
- Add avocado to the egg yolks and mash mixing well the back of a spoon. Add in tomatoes and onions. Mix well.
- Add in lime juice, salt, and pepper. Mix well.
- Add mixture to a piping bag and pipe into the centers of the egg whites. Top with paprika and cumin.
The robust flavors of paprika and cumin add the perfect kick to these healthy snacks! Take the classic deviled eggs up a notch by making this healthier option instead. You can add in some other spices to give them an even bigger kick!
