How to Cook Spaghetti Squash in the Microwave
On the quest to make healthier choices without being boring I’ve found the yummiest side dish – Spaghetti Squash. I didn’t always like making it because it can take too long. And if you’re a busy mom like me, you don’t have an hour or so for your side dish or mock spaghetti to be cooking. You’ve got to get a little creative with your cooking styles. Voila, enter the microwave… my go-to bestie!!!
Ingredients:
- 1 Spaghetti Squash
Directions:
1. Wash and dry the outside of the squash.
2. Carefully, with a sharp knife, cut the squash open, going along the length of the squash and not across its width.
3. Place both halves face down in a microwaveable safe dish and add ¼ c of water.
4. Cover with plastic wrap.
5. Cook on high for approximately 8 – 10 minutes.
6. When time is done, remove the dish from microwave and let cool.
7. Remove the plastic wrap when cool and with a spoon, spoon out the just the center seeds area.
8. Then, with a fork, begin scraping the sides of the squash and you’ll see the “threads” of the squash begin to fluff up.
9. Transfer these to a dish and they can be used for further recipes, or top with melted butter, salt and pepper and serve as is.
Yes, that simple! I even make these scrumptious desserts in the microwave, hence that’s why Ms. Micro is one of my best friends.
Feel free to cook just one half at a time, wrapping and storing the second half for another day. Since I try to be as low to no carbs as possible I take this spaghetti squash and put sugar-free tomato sauce on it and some cheese for a quick and filling dinner. It’s a fun meal and my kiddos don’t even realize it’s healthy. That’s a huge win in my book.
