Ingredients:
- 4 egg whites, room temperature
- 1 teaspoon cream of tartar, optional
- 1 cup white sugar
- 1 cup cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla or almond extract
- 1 Tablespoon juice (lemon, pineapple, etc.)
- Powdered sugar for garnish or frosting and candies
Directions
- Preheat the oven to 325F and oil your little house pan.
- Place the room temperature egg whites in a bowl and whip with a mixer for 4 minutes, until smooth peaks form. If you are having a hard time achieving the soft peak stage, add a teaspoon of cream of tartar and continue whipping.
- Start adding the sugar gradually – about 1/4 cup every 30 seconds, until fully incorporated.
- Sift the flour and baking powder into a small bowl and then add to the eggs, along with the salt, vanilla, and juice. Mix well with a spatula or spoon.
- Portion 1/4 cup portions of batter into your mini house molds.
- Bake 18-22 minutes until an inserted toothpick comes out clean.
- Cool cake thoroughly before frosting or sprinkling on powdered sugar
