It’s simple enough that you can assemble it the night before and just plop it in the oven in the morning. And, for when you want a hearty breakfast on busy mornings, you can cook it up and freeze it in portions for quick morning breakfast. It’s a win for busy moms like me!
Sausage Breakfast Casserole: Breakfast Recipe for Picky Eaters
Feed a crowd with this Sausage Breakfast Casserole. It’s loaded with sausage, egg, and cheese for a hearty breakfast. Prepare this easy breakfast recipe the night before, put it in the oven in the morning and impress your guests. Everybody loves this dish, from kids to adults and even picky eaters! You can never go wrong!
Add a platter of sliced fruit, some yogurt and granola, and a few breakfast pastries, and you’re all set.

Ingredients
- 6 English Muffins, halved and cut into cubes
- 16 oz roll of Breakfast Sausage (original or spicy, whichever you prefer)
- 12 large eggs
- 2.5 cups of Colby Jack Cheese (1/2 cup in the recipe, the other 2 cups on top for melting)
- 1/2 cup red or green pepper, diced
- 1/2 cup onion, chopped
- 1/4 cup butter, melted
- 2 cups of milk
- 1/2 teaspoon pepper
- 1 teaspoon garlic
- 1 teaspoon Italian seasoning (optional)
- 1/2 teaspoon ground mustard (optional)
- Salt to taste
- Parsley (garnish, optional)
Let’s Make This Easy Breakfast Casserole: Directions
- Spray a 9×13 pan with cooking spray. Sprinkle in English muffins and drizzle with melted butter. Set aside. This is one of my favorite glass pans, especially since it comes with a lid!
- In a pan, brown sausage. Drain grease.
- Sprinkle sausage over English Muffins in the pan. Add peppers and onion. Sprinkle with cheese.
- In a large bowl, whisk eggs, milk, ground mustard, salt, and pepper.
- Pour egg mixture over casserole. Cover and refrigerate overnight.
- In the morning, preheat oven to 35o degrees Celcius
- Bake until golden brown, 45-50 minutes. A knife should come out clean from the center.
