I’m so excited to share this recipe with you today especially since avocados will nearly come back into season soon! Avocado is the perfect substitute for a taco shell. Truly, a healthier version of tacos and a delicious and easy meal!
Taco Stuffed Avocados: Kid Friendly Keto Recipes
A healthy twist on tacos! Here we ditch the taco shell and use avocado boats or hollowed-out avocados to hold your taco filling. Load up all your favorite taco toppings into the avocado boats for an easy lunch or light dinner. The avocado boats keep this low-carb but still so satisfying and delicious – ready in 20 minutes, healthy, kid-friendly, a family favorite, and perfect for busy weeknights!!
To finish your night with another kid friendly dish serve up these scrumptious Keto Raspberry Muffins. No one will realize there’s no sugar, no gluten.. just delish!
Ingredients
- 1 lb ground beef
- 1 white onion – to decrease the net carbs you can put in less onions
- 1/2 cup sharp cheddar cheese
- 8 cherry tomatoes sliced -to lower the carb count, you can reduce the amount of tomatoes used
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 tablespoon chili powder
- 1 teaspoon cayenne; may add more for more heat
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 avocados; sliced in half
Directions
1. In a skillet, cook beef and onion until beef is browned. Add in cumin, cayenne, paprika, and chili powder. Add salt and pepper. Stir well.
2. Slice the avocado in half and remove the seed. Take a spoonful of the avocado out an set aside. Fill with ground beef, cheese, and tomatoes.
3. May use leftover avocado from the spoonful to top.
You can also mash the flesh of the avocado with lime juice and cilantro for a quick and easy guacamole topping.
