Slow cookers usually allow one-step preparation. All you have to do is place all the ingredients and let the slow cooker do the work. Other than it saves preparation time, it also cuts down on cleanup. Slow cookers are definitely life-savers especially during the week when it can get a bit crazy with appointments and activities. And as you may already know, I have a big family (7 kids). Making dinners using my slow cooker is a big help for my family and me.

Zesty Slow Cooker Orange Ginger Pork
This delicious and zesty pork recipe is so easy to prepare and even tastes better than what you get in a restaurant. The orange adds a tangy sweetness to the sauce while the ginger contributes to a more balanced and developed taste. You can create your own marinade/sauce from scratch, or you can always opt to use your favorite jar of orange ginger sauce just like what I did on this recipe.
Ingredients
- 1 lb pork, boneless, cut into cubes
- 1 can baby corn pieces, 14 oz
- 1 jar your favorite orange ginger sauce, 12 oz
- ¼ onion, cut in chunks and layers separated
- 2 carrots
- 1 orange, peeled and sections, then chopped in large pieces
- 1 tbsp orange zest
- ½ green pepper, chopped
- 2 celery sticks, chopped
- Salt and Pepper
- 1 tbsp cornstarch
- 2 tbsp water
Directions
- Place pork and onion in the slow cooker bowl and add in ½ c water, salt, and pepper.
- Add the carrots, green pepper, celery, and baby corn.
- Pour in the orange ginger sauce and the zest from the orange.
- Cook on low for 5 – 6 hours or until the carrots are tender but still firm.
- In a small bowl, mix the cornstarch and water together. Add the orange segments and the slurry of cornstarch and water to the slow cooker bowl, and cook for another ½ hour.
- Serve on rice and enjoy!
Just a little note: You must make sure to mix the water and cornstarch together thoroughly before adding it to the sauce to get a smooth, thick sauce. You can also add other vegetables like broccoli and snow peas. This may be a good way to feed children who are picky eaters.
